Fabio Patanè is our Kitchen Director. Mr. Patanè received formal culinary training in classic French and Italian cuisine from chef and mentor Robert Reynolds at Chef Studio.
Food has always been a strong part of his life; he grew up in Sicily, the biggest island in the Mediterranean Sea, with a centuries old culinary culture. Mr. Patanè was exposed to the beautiful world of cooking by smelling and tasting from pots and pans in his mother’s kitchen. Shortly after finishing high school, he moved to London, UK – where he started my culinary career. He had the opportunity to work in prestigious restaurants and learn what fine dining really is. Some years later he moved to his current home, the beautiful state of Oregon.
As a chef and as a parent of a second grader who attends AIS, his goal is to provide the best quality meal using exclusively organic ingredients. For this reason, Ashbrook’s kitchen will source food from First Alternative Co-op and Gathering Together Farm.
